Gratinated half lobster, miso, västerbotten cheese sauce, shiso panko

Swedish Ryggbiff or Halibut fillet
Potato gratin with cep & soy, japanese mushrooms, braised red cabbage, apple, red wine sauce or fermented leek butter sauce

Toffee pudding, yuzu miso caramel, chocolate ganache, Japanese granola
